When prepared for the Japanese fusion recipe, a fried chicken cutlet infused with a Japanese curry sauce replaces the scotch egg’s patterned outer layers. Instead of the sausage’s natural savory flavor, the katsu curry gives the scotch egg a sweeter taste.
