Green Enchilada Sauce Recipe

With Cinco de Mayo right around the corner, you might be looking for some different ways to celebrate. What better way to do that than by whipping up this delicious green enchilada sauce? With a wonderful consistency, beautiful color and spicy kick, this sauce is perfect to serve up with your favorite enchiladas.

  • 4 poblano peppers
  • 1 serrano pepper
  • 1 small onion
  • cilantro to taste (between 1/4 cup and 1/2 cup)
  • 1 cup vegetable broth
  • 3 tbsp flour
  • 1 1/4 tbsp cumin
  • 1/4 tsp oregano
  • 1/2 tsp salt
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 lime, squeezed


Step 1: Roast the poblano peppers. Turn your stove flame on to medium and put the pepper directly on top. When the outside turns black, flip to ensure that each side reaches the same color. 

Step 2: Place the roasted peppers in a bowl and cover with a lid. If you don’t have one, you can place a plate over a regular bowl. Leave the peppers in the bowl for about 6-8 minutes. Take them off and remove the blackened skin. Make sure to let them cool off first!

Step 3:Slice the peppers into strips.

Step 4: Heat the oil in a saucepan and add the onions and garlic. Fry for about 4 minutes. 

Step 5: Place the onions and garlic into a blender. Add in the poblano peppers, cilantro, salt, serrano peppers (chopped) and a small portion of the vegetable broth as well. Blend together until there are no lumps.

Step 6: Pour the sauce back into the pan, adding more olive oil if needed, and fry for about a minute. If you’d like a thicker consistency, add a pinch of flour and whisk in well. 

Step 7: Transfer the sauce to an unheated bowl, squeeze the limes over the top and stir in the rest of the vegetable broth. Serve up and enjoy!
